Two options to start with: 1) Battery backup. 2) The iris is constructed in such a way that it wants to close and there is some mechanism that keeps it from doing so. The manual control releases that mechanism and allowed it to close.

a second question: how does a 'natural iris' work?

You mean like if you bury the gate?
Well, in theory, the wormhole will vaporise the few atoms that occupy the same space as the event horizon as it forms, same as it would with the air when it form normally, only when it is buried, it has a layer of matter that is closer to the event horizon than even Earth's Iris. The matter would in fact be touching it.
Artificial intelligence is no match for natural stupidity!

no: i think it was in "Prototype" then SG-5 was send to the wrong planet and Carter said that there was a natural iris on offworld gates

It wasn't a natural iris so much as a program built onto the gate (from my understanding) that didn't output the traveler if they didn't input the proper code before transit and then dumped them on a different world.

If it was a part of the gate, it probably wasn't originally, and it was added on by Anubis.

but wouldnt anubis want to stop all travel insted of just organic matter, which was stated in the episode

90% of the galaxy wasn't developed enough to create mechanical probes and the likelihood that the 10% that was gating to that world was so small that it probably wasn't important enough of an oversight to correct.

but that implies that only anubis can turn the iris off and that means that no one can access the gate due to anubis being (half)accended

Wasn't that kind of the point of it, though? Anubis wanted to prevent anyone who didn't have the code from accessing the planet.

but i reckon that it must of been annoying if he or his Jaffa "forgot" the code

it doesnt stop the problem of the jaffa not being able to use the gate

Why would he want the Jaffa to be able to use the gate? He didn't trust them and thought of them as little more than cannon fodder. He didn't give having his own Jaffa slaughtered a second thought when he felt that they underperformed.

Not to him. They're tools that can be replaced when they fail to perform.
