I'm your typical omnivore. I eat meat but if presented with a veggie dish I'll eat that too
Here's a recipe you might like in spoilers

Rice salad with corn and lime (a gluten free adaptation of a cracked wheat salad recipe I came across on the internet)
1 cup white or brown rice
2 1/2 cups water
1 lb. of frozen corn, thawed
1/2 cup dried cherries
1 cucumber, cut into chunks (I peel it first but you don't have to, probably more vitamins if you leave the skin on)
2 tbsp. lime juice
2 tbsp. olive oil
1/2 tbsp. kosher salt (or 3/4 tsp. table salt)
2 tbsp. dried cilantro
1 tbsp. dried mint
Cook the rice with the water according to package instructions on the stove top or in the rice cooker according to rice cooker instructions if you have one then let cool to room temperature. While the rice is cooking put the dried cherries into a small bowl and cover with hot water and let them soak.
Once the rice has cooled to room temperature add the rest of the ingredients (but pour the water off of the dried cherries first) and stir to mix thoroughly and either serve right away or chill and serve later. I prefer to chill and serve later as it gives the flavors more of a chance to blend.
This makes a fantastic side dish. You have both your whole grains (if using brown rice) and your veggies in one side dish.
I made it for pot lucks at the massage school I studied at and just recently graduated from (haven't sat for the state licensing board exam yet) and got rave reviews
