Some of the best FanFiction I have ever read is by an Author named Eve (on the Gateworld archive). Her stories are a bit Daniel centric, although mainly team fics, and sometimes she teases about Daniel/Sam but none of he stories are ship in any way.
I'm a total Daniel nut, and I've read a ton of Daniel centric fics; Plumtukered is another awesome writer for that area.

Another couple of recs; they’re right here on Gateworld too.
Garden of the Gods by Enigmatic Ellie is brilliant: lots of politics and intrigue. She doesn’t post updates all that regularly but there are around 23 meaty chapters archived here. BTW, it’s S/J but not all that hearts and flowers stuff…
Aftershocks by Rachel 500 – stumbled on this at fanfic.net but it’s now here on GW too. It’s a series of episode tags, S1 at present and I sure hope she sticks around long enough to do the entire show because they’re wonderful… not unlike the great Medical Considerations series, by OzKaren [check out the Ask the Fandemonium authors thread, under Stargate merchandise here on GW for news of Karen – she is now writing for Fandemonium].
And if anyone wants laugh-out-loud but with a serious subtext Jack and the Asgard stories, check GW for anything by DinkyDow…
