Its because...erm...I just had this in my head aswell...I think Ianto found out about it in the same manner as Gwen but instead he followed Jack. Don't forget in Fragments - He was able to track down Jack at the Hub's entrance and also while he was in the SUV

OMG!!! OMG!!!

The first of TTLM pics would do brill for photoshopping...if I had it...

In my fanfiction 'Determined' there's a moment where Jack looks at the character of Edele in the same manner as he does with Ianto...

Also in a later chapter Ianto looks in the same manner to Edele before she yanks him by the tie and threatens that she'll reveal his secret coffee recipe.
