Why would I skip from the original to the 1985 film? Also, another big question... I don't have any interest in seeing the other monster movies, just the Godzilla films. If I see Godzilla vs. X Monster, some monster I've never heard of, will it still be easy to follow?

Yeah, the current arc would be necessary to watch from 1985 on. Are you asking about the spinoff movies like the Mothra movies? Other than the current ones, you should be ok, and the spinoff movies have nothing to do with any canon.
