Absolutely! For me, Enterprise ended with "Demons" and "Terra Prime". That last hour doesn't register.
Funnily enough, the Trek 'expanded universe' books take pretty much the exact same tack.
The first novel's framing narrative is Jake and Nog looking at recently declassified information, which reveals the known history of the end of the Enterprise's voyage and the birth of the Federation as it has been understood (ie: TATV) as false and fabricated. The reality of it is similar, but that Trip's death was faked so he could infiltrate the Romulan Empire prior to the Earth-Romulus War.
