I would say he is a sociopath who also suffers from delusions of grandeur.

That said, I knew he was losing it when he thought it'd be romantic to tell the love of his life that he'd just slaughtered a village of women and children like animals. Then again, Padme apparently fell in love at that instant, so maybe she was a little loopy, too...

there are the unstable moods that Vader suffers. One minute he's happy because he sliced Obi-Wan Kenobi in half. The next, he's all huffy that his subordinates let the Millennium Falcon escape. And when Vader ain't happy, ain't nobody happy.
