If the wormholes are in a different dimension (stated claerly in "Solitudes" and "Forsaken") how can they affect objects in out dimension (like a sun in "Red Sky") and how come sometimes someone can be heard to counting down an objects arrival when other times objects seem to be transported instantly?

Because the Stargates themselves serve as an interface between the other dimension and ours. In Red Sky, the Wormhole was cut off which caused the atoms to reappear in our space. Admittedly there are several large plotholes with the wormholes themselves, but that can't be helped.

Actually, there are several large plot holes in the episode Red Sky. I wouldn't think to hard about that episode, as most hard core fans just ignore it.
