Anyway, I was wondering how many times a Starship Enterprise and her crew had done it.

1 Enterprise NX-01 saves Earth from a Xindi weapon. Ent: Zero Hour.
2 Kirk and Spock keep McCoy from changing the timeline, preventing a new dark age. TOS: The City on the Edge of Forever.
3 NCC-1701 saves Earth for the V"Ger probe. Star Trek: The Motion Picture.
4 Kirk and crew save Earth from the Whale probe. Star Trek IV: the Voyage Home.
5 Picard and his crew halt an alien plan to take over the Federation, saving Earth from enslavement. ST, TNG:Consprinacy
6 The Enterprise-D stops the first Borg invasion. ST, The Next Generation: The Best of Both Worlds I+II.
7 The Enterprise-E saves Earth from the second Borg Invasion. Star Trek: First Contact.
8 The Enterprise-E saves Earth from Shinzon's weapon. Star Trek: Nemesis.

I think thats all of them.

But you can always include the Dominion Wars, led by Sisco, that was a big thing. It wasn't led by the Enterprise though, rather the Defiant.

Not really, they saved the entire universe.
Which happens to include Earth, so technically it doesn't count.
