Found a post at another forum and it's a pretty interesting observation.

There are somewhere around 50 ships in the fleet (I think), and at most given moments we only see a handful of them, so we will probably find more cameos like this in the future.

I think someone on a board said the Nostromo (from Alien) was in the fleet?

You wouldn't believe how many times I've tried looking for the Galactica in Serenity. So far no joy, though there are a couple that look like Colonial One, just the general shape.
